The most common packaging for cayenne pepper is made of plastic, however plastic packaging and materials made from other plastics are the biggest contributors to waste that pollutes the environment. The use of leaves as substitute for plastic packaging is highly potential, because the leaves have been used as food wrappers in the community. However, the use of leaves in maintaining the shelf life of agricultural product is rarely done. This study aims to analyze the ability of several types of leaves as cayenne pepper packaging by using organoleptic analysis. The results showed that the highest preference for color, freshness, aroma, and texture of cayenne pepper was found in the treatment of banana leaf packaging.
