Abstract

Currently, many people are less concerned about the increasing number of free radicals in the body. Free radicals are atoms, molecules or compounds that can stand alone and have unpaired electrons, therefore they are very reactive and unstable. So it can cause cell or tissue damage, autoimmune diseases, cholesterol deposition and cause atherosclerosis and even cancer. One solution to ward off free radicals is antioxidants. Antioxidants are compounds that can slow down the oxidation process of free radicals, so they can protect cells from damage caused by unstable molecules known as free radicals. The aim of this research is: to find out the klepon formula, the process of making ginger extract klepon, to find out the panelists' level of preference for klepon products. Based on the research results, the preferred formula is F1, namely 200 grams of sticky rice flour, 10 grams of purple sweet potato flour and 150 ml of ginger extract.
