Abstract

The disadvantage of minimally processed fruit is the high rate of respiration and transpiration due to injury, resulting in increased loss and accelerating the deterioration process. One of the efforts to slow down respiration in minimally processed pineapples is the application of active packaging. This study aimed to analyze the loss and appearance of minimally processed pineapple that was applied to active packaging with an oxygen absorber and various types of plastic. This study used a completely randomized factorial design method with 2 treatment factors, namely oxygen absorber and type of packaging plastic. Observation variables include weight loss and organoleptic tests. The results showed that the lowest weight loss value was found in the PP plastic treatment combined with an oxygen absorber, but the type of packaging plastic and the oxygen absorber, as well as the interaction between the two, had no significant effect on the minimal weight loss of processed pineapple. The highest preference values ​​for freshness, color, and taste were found in the PP plastic treatment combined with an oxygen absorber, but this treatment had no effect on the panelists' preference value.
