Abstract

The processed pineapple product that is widely available in Sambas is jam, the rest is only consumed fresh or sold fresh. In order to overcome the problem of harvesting so that the price of pineapples does not drop (cheap) drastically, namely by processing them. Potential products that can be developed in the village of Kartjaman are pineapple crackers and shredded pineapple. The consideration of this processed product is because, based on the observation result, crackers are a snack that is not limited to consumers. There is no limit to the consumer segment who consumes cracker-type snacks. The next consideration for product diversification is pineapple shredded. Shredded pineapple is one of the side dishes of horticultural commodities. In order to improve community nutrition and strengthen food security at the village level, vegetable shredded can be one of the solutions to improve nutrition in Kartiasa village. In this study, carbohydrat by different will be calculated from pineapple crackers. Carbohydrat by different pineapple cracker healthy snacks by 69.07%.
